ORIGIN: Sumatra, Indonesia
The Republic of Indonesia is made up of more than 16,000 islands. Sumatra is the largest of the islands, and is the countries top producer of arabica coffee. Located in the bean belt just south of the equator, Sumatra is ideal for growing coffee. Sumatran coffee is globally praised for its unique and intense flavors. Often described as earthy, creamy, it is thick and has a low acidity. One thing to note with Sumatran coffee though, is it often looks slightly disheveled. This is because producers use a wet hulled process. Weird yet wonderful is something to keep in mind.
REGION: Aceh
Located in the northern Gayo region, this area has soaring volcanic mountains, high elevation and plenty of rainforests. As a result, coffee has a forest like core, with chocolate undertones. Most of the coffee produced in the region, is with small landholders (92%+), who use traditional and natural farming techniques.
PRODUCER: Permata Gayo Cooperative & Koperasi Prousen Gayo Highland
This blend is produced by a small group of Gayonese farmers, each owning less than one hectare of land. These farmers employ strict organic practices to allow the natural ecosystem in the area to thrive as well. Both cooperatives are Fairtrade certified.
DECAF PROCESS: Swiss Water®
An organic approach to decaffeination that utilizes fresh water, temperature and time rather than chemicals. The Swiss Water® process removes 99.9% of caffeine while preserving the original flavours and characteristics of the beans.
